A local sourced loin Venison that is marinated for 36 hours, to allow all the flavours to penetrate the tender meat, is sat upon a bed of celeriac puree and malt crumble, to give an explosion of textures to this decedent dish. The dish is accompanied by pickled baby beetroots and sprouts finished with crispy Parma ham, topped off with venison jus and locally sourced nasturtium from a company called Aqua Farm, the micro herbs add a peppery note and dimension to this dish as well as looking beautiful.
